Roaster Corn Salad and Veganomicon


Tonight I made a summer favorite - roasted corn salad with lots and lots of roasted garlic. I am so glad I made enough to take to work tomorrow.Since my copy of Veganomicon came in the mail today I thought I'd share some photos from testing awhile back:

That should be enough to blow your mind right now. But if you could only cook one thing out of the cookbook. I say go for the brownies - they will change your world. But leave out the dried blueberries - dried fruit and nuts should stay out of brownies in my opinion.

how was the curried carrot dip? i'm thinking of making that one soon

It was good, but not really my thing. I'd make a dill, or other herb carrot dip next time. Same with the olive dip. I couldn't use it before it went bad. If you love purple olives you'll love it.

Jeez, that's a lot of testing! Once blueberries go down in price (unless I can use frozen, can I?) I will definitely make those brownies. :-)

WEBLY! I don't know, I just felt like yelling your name. Anyway, that's a freaking lot of testing, but it looks like you got to enjoy some delicious and beautiful food from it.

Hope your wrist is better. I'm still in my brace. Grumble. Hope I can be back on a bike before it snows...

Melody - the more garlic the better!
Vegan_noodle - you don't need fresh blueberries. the recipe calls for blueberry jelly and dired blueberries. I highly suggest leaving out the dried blueberries.
Emilie - You're going to love this cookbook when you get your paws on it! I've been in physical therapy trying ti fix my arm, but it's taking forever! I hope your wrist heals more quickly than my body.
Megan - The benidict is so good!
veggiegirl - I usually judge a recipe by the dessert section. I highly suggest starting there if you're overwhelmed.

I made the Pumpkin Saag tonight & have my eye on the Eggplant & Potato Moussaka for tomorrow.
Of the recipes you've made I'm going to try the Chickpea Cutlets, Samosa Stuffed Baked Potatoes, Corn and Edamame-Sesame Salad, Cornmeal-Masala Roasted Brussel Sprouts, Leek and Bean Cassoulet with Biscuits, & my husband wants the Biscotti for work!
