Quick and easy meals

Boxed Dinner: Thai Peanut:
These Thai Kitchen boxes are a staple in our house when we don't want to cook. Brian even gets fancy and adds some stir-fried tofu to the dish.

Indian Inspired Dish:
I don't know what to call this, but it is really quick and simple.

Saute 1/2 chopped onion, a few cloves of chopped garlic.
When the onions are clear add some cumin and mustard seeds. Cook for about 1 min, or until they pop and the kitchen smells wonderful.
Add 1 1/2 cup chickpeas and 1 can fire roasted tomatoes, drained. Mix together. Add a few cups chopped leafy greens and cover until steamed.
Serve warm.

Yum! Thai and Indian are the two cuisines I am all about at the moment, so this piques my interest particularly!

I like those Thai Kitchen thingies too, but I think I have been scared off recently due to the caloric/fat
content of them...aren't they kinda high, or am I thinking of something else? I dunno.
Oh, and your food looks nummy!

that chickpea dish looks wonderful, spicy and healthy. I'm going to try to think of making that when I'm out of fresh produce as it uses some good staples that I always have laying around.

Laura - Do you cook thai food often at home? It's the one food I have a really hard time making myself so whenever we go out to eat that's all I ever want.

Brooke - I think the sugar in the thai peanut is really high. The fat is fairly low for being packaged.

Megan - Chickpeas are the best!

Thai Kitchen is wonderful! :) And many of them are gluten free, aren't they? Not that I look for that...but it's nice to know...

I made the indian dish tonight! It was good. The only bummer was the tandoori bread I bought to go along with it was moldy :\
