Mint Pistachio Cake

I meant to make the rosewater pistachio cupcake recipe from Vegan Cupcakes Take Over the World, but I was in a hurry and couldn't find rosewater. Going with what I had and on an inside joke with my sister, who will receive this cake, I went with mint. I never knew there are many mint pistachio cakes out there!

The pistachio taste wasn't strong enough to really taste it. Next time I will make some pistachio-butter to blend into the batter and make a light mint frosting. Everyone loved how moist it was.

I'm not sure if it's cool to post the recipe, but you all better have the book by now. I just subbed 1/2 tsp. mint for the rosewater and added some fresh mint to the frosting. Beautifully green- just like spring.
Rice-mellow was also added to the frosting (I'm moving and just trying to use up old food) and it gave a really nice dense thickness to the butter cream frosting. It reminded me of the vegetarian marshmallow fluff in a can.

That is one insanely awesome looking cake. Mint pistachio, just sounds like an interesting flavor combo.

To answer your comment awhile back on my blog...

We cruised Royal Caribbean. Maybe Carnival will be more accomodating. When I contacted RC before the cruise, they expressely said they would not cook any special food for vegan or macrobiotic diets. (They came up with macro, not me.)

Because of that, I didn't bring recipes. The kitchen staff were not particularly accomodating though the wait staff really wanted to be helpful.

I packed some extra protein (nuts and some primal strips) just in case. In general, they were unnecessary. Though I wished I had brought a bar of vegan chocolate or some cookies.

When I went sailing through The Moorings in the the Caribbean, the chefs were very accomodating. They wanted recipes and didn't mind if I helped out in kitchen. You'd be looking at a small sail boat with 2-3 other couples if you ever wanted to go that route. I'd highly recommend it and would love to go sailing again.
