Sugar Cookies

Last weekend my partner and I enjoyed our 8th year together. He wanted sugar cookies - like those pink frosted Grandma's cookies.
This what I came up with.

Sugar Cookies:

2 1/4 cups unbleached white flour
1 teaspoons baking powder
1/2 cup non-hydrogenated vegan margarine (i used earth balance)
1 cup sugar
1 tablespoon powdered egg replacer mixed with 2 tablespoons water
2 teaspoons vanilla or 1 teaspoon almond extract

1. sift together flour and baking powder into a medium bowl; set aside.

2. in a large mixing bowl, cream together margarine and sugar. add egg replacer and vanilla and beat until smooth. add flour mixture and mix to form a stiff dough. (I added 2 tablespoons liquid at this point to get it all to stick together.)

3. preheat oven to 375 degrees.

4. lightly dust a work surface with flour or sifted powdered sugar. with a rolling pin, roll out dough disk to about 1/4 inch, or more thickness. don't roll too thin. I used a pint glass to cut out the dough.

5. Bake in top third of oven for 10 to 12 minutes, or until lightly browned. remove, put on rack, allow to cool completely.

6. Frost when the cookies are cooled with your favorite frosting. I used a fluffy buttercream with extra vanilla.

These were fantastic! Perfect! and made everyone happy.

Congratulations on your 8 years together! I think of 8 as an auspicious number.

I'm sure that next year when we hit 8 years, my boyfriend will also want sugar cookies. They are his very favorite treat.

All of your food looks so good!! When you make your food approx. how much do you make? I have a hard time making dishes without an abundance of leftovers, which sometimes go bad. Do you you cook just enough for you & your partner? Or do you have lots of lefovers also?

Melody - Did you actually get to make the zucchini pesto dish? I can't wait until summer when I have enough pesto on hand to make all my food filled with basil!

Urban Vegan - Up your cookie intake! There are so many different kinds.

Selina - Generally I make too much. I have a hard time making enough for one meal. My partner is a big guy and eats for two so often I can get him to eat the left overs. often there's enough for lunch the next day. How do you handle the situation?

my guy eats a lot too. but usually we have a lot left. i take my leftovers to work for lunch most days. he doesn't. but sometimes the food isn't as good, which is disappointing. but it definately saves money. :)

these are so good!
i added about 1/4 of a cup almond paste and two tablespoons applesauce...
they turned out really well.
